Its a breakfast quiche in my opinion because my father has made us many quiches before and he makes them more substantial with lobster meat etc.
I have made this as is and i have made it substituting the eggs for eggbeaters (were about to expire so thought i would use them) and substituting the milk for vanilla soymilk (also going to expire soon). Either way it came out lovely!
I got it off the blog eat,live,run which is my new LOVE!!!! I have been eating healthy for like 2 weeks straight just from her inspiring food posts.
This recipe will make 1 quiche
1 unbaked pie shell
1/2 pound sliced monterey jack cheese (i used shredded cheddar cheese)
1 tbsp onion flakes (i used about 1/8 cup real onions)
3 slightly beaten eggs
6 slices of bacon cooked crisp and crumbled (i used REAL bacon bits instead)
1 cup skim or lowfat milk
1/2 tsp salt
dash of pepper
2 cups of broccoli florets
4 slices chopped canadian bacon (i omitted this)
1. preheat oven to 350 (180 c)
2. prepare pie crust, i used premade pie crusts you get in the frozen section. cover pie crust with overlapping slices of cheese (i just poured the shredded cheese all over the bottom, about 3 oz.)
3. sprinkle broccoli and onions over the cheese
4. in a medium bowl combine the eggs bacon milk salt and pepper.
5. pour over the cheese and bake for 55 minutes
let me know if you like it. i will be playing with more recipes in the future so i will share them if i like them. i am so inspired now! i will try to take pics from now on but i made it yesterday so i ate 2 pieces and put the rest up to freeze for later so sorry!
P.S. i got a dental exam. no cavities for the umteenth year straight! and since i am doing so good parts of my teeth that were getting weak are starting to remineralize. any tips on what i can do to speed this up? i want to really make these teeth stronger!

Ok, how about I'm in love with that blog too! I checked it out after reading your post and I was falling in love with her food. Especially the breakfast food, which I don't eat very often.

jtbrown- thanks. let me know how the makeup shopping goes. i love her blog, i am reading it back thru 2007. still eating healthy! girl you know breakfast is important but i feel you. sometimes all i want is coffee then i eat maybe 2 hours after that when i feel more like eating. i just eat when i feel like eating. no need to force yourself
